Sunday, 02.05.12: Rest Day

Pam sent this recipe in and says she uses it for an afternoon snack or after one of her dance classes.

Paleo Breakfast Bars

  • 1 ¼ cup blanched almond flour
  • ¼ teaspoon Celtic sea salt
  • ¼ teaspoon baking soda
  • ¼ cup grapeseed oil
  • ¼ cup agave nectar
  • 1 teaspoon vanilla extract
  • ½ cup shredded coconut
  • ½ cup pumpkin seeds
  • ½ cup sunflower seeds
  • ¼ cup almond slivers
  • ¼ cup raisins

Preparation:

  1. In a small bowl, combine almond flour, salt and baking soda
  2. In a large bowl, combine grapeseed oil, agave and vanilla
  3. Stir dry ingredients into wet
  4. Mix in coconut, pumpkin seeds, sunflower seeds, almond slivers and raisins
  5. Grease an 8×8 baking dish with grapeseed oil
  6. Press the dough into the baking dish, wetting your hands with water to help pat the dough down evenly
  7. Bake at 350° for 20 minutes

This weekend we are in the middle of Chinese New Year so to recognize that, here's a paleo recipe for Egg Drop Soup courtesy of PaleoDietLifeStyle.com

How about a simple Asian inspired soup to warm your soul? It’s the perfect soup to whip up in less than 20 minutes and enjoy on a lazy day. I actually got introduced to this recipe the last time I had an upset stomach. It contains very few ingredients, yet it is very soothing. I’ve provided you with the bare bones, or base recipe and you can choose to add more, or even less. For example, both chicken and shrimp would make the soup more hearty and leeks would add great flavor to the simple broth.

Egg drop soup, also often called egg flower soup, originates from China and consists of eggs added to a boiling chicken broth. The eggs cook almost immediately when added to the hot broth and create thin strands in the flavorful liquid. It’s most often simply seasoned with salt and pepper and green onions are often added. Here you can go with the habitual green onions, but I’ve chosen to add chives instead, just to make it a little different. Americans often prepare this soup by adding corn starch to make it thicker, but there is no need to thicken it and I recommend that you enjoy it very liquid, just like the original version of the soup.

Since both eggs and homemade stock are highly nutritious, this soup is a great source of nutrients and minerals. That makes it a perfect soup to enjoy when feeling run down or when dealing with some king of virus. It’s also a very good idea to include highly nutritious foods like egg yolks, bone broth and organ meat in your day to day life. In fact, the focus around a paleo diet is too often only placed on eliminating toxic foods like sugar, vegetable seed oils as well as grains and legumes, but for an absolute optimal health this is rarely enough. Focus should also be placed on other lifestyle factors like physical activity, sleep and stress and also on obtaining ample nutrients, minerals and trace minerals from high quality natural foods. This way you not only prevent your immune system from being weakened by toxic foods, but you also help your body and immune system do its job by being nutrient replenished. It’s then that you can experience the optimal health that you really deserve.

This soup is great both on its own as a quick lunch or for dinner alongside another main dish.

Egg drop soup recipe

Serves 4

Ingredients

  • 3 cups chicken stock;
  • 1/8 tsp ground ginger;
  • 2 tbsp fresh chives, chopped;
  • ¼ tsp salt;
  • 2 eggs;
  • 1 egg yolk;

Preparation

  1. Pour the chicken stock into a large saucepan over a medium-high heat.
  2. Add the ginger, chives and salt to the liquid and allow it to come to a boil.
  3. In a small bowl, whisk together the eggs and yolk.
  4. As the broth continues to boil, use a fork and drizzle the eggs into the pot. The eggs should cook immediately.
  5. Serve warm and enjoy!
